Ingredients for 4 people:
- 500 grams of fresh anchovies
- 4 springs of fresh parsley
- 5 lemons
- 4 tablespoons extra virgin olive oil
- q.s. salt
- q.s. pepper
How to prepare marinated anchovies
1) Clean the anchovies. Choose fresh anchovies, wash them and remove the head, during this operation, try to eviscerate the entrails of the fish as well: the last ones in fact will be removed together with the head. Gently open the anchovy like a book, then remove the central bone and tail. Wash the anchovy fillets under a trickle of cold running water and put them over the absorbent paper to dry them.
2) Marinate. Arrange the fillets in a slightly deep plate to form a single layer, sprinkle them with the juice of 3 lemons and leave them to marinate for at least 4 hours in the refrigerator.
3) Make the sauce. Squeeze the remaining lemons, filter the juice and collect it in a bowl. Add the extra virgin olive oil, salt, pepper and the finely chopped leaves of a sprig of parsley, then emulsify the ingredients until you get a sauce.
4) Complete and serve. Take the fish fillets, drain them and put them in a serving dish, pour the prepared parsley sauce and let it rest for 30 minutes. Before serving the marinated anchovies, decorate the dish with sprigs of parsley and a few slices of lemon.
